Mormon Funeral Potatoes
32 ounces frozen hashbrowns (shredded)
1/2 white onion, minced
2 T salt
1 T pepper
2 cans cream of chicken soup
2 C sour cream
2 C shredded cheddar cheese
1/4 C melted butter
Toppings of your choice: Crushed Ritz Crackers, potato chips or corn flakes
Mix the potatoes and diced onion. Season well with salt and pepper. Stir in the soup and the sour cream. Mix well. Add in cheese and stir. Drizzle melted butter and stir again. Press the mixture Ito a 9x13 pan. Top with the topping of your choice. Bake at 350 degrees F for 25 to 35 minutes, until the mixture is bubbling.
