“Extra” Rueben Sandwich

1 brick halloumi cheese

1/3 to 1/2 lb corned beef

Yellow mustard

Thousand Island Dressing

2 slices marble rye

1/4 C sauerkraut

2 slices swiss cheese

2 T butter

Heat a bit of butter in a small skillet. Spread yellow mustard on bread. Spread Thousand Island dressing on bread. Pile corned beef on one slice then top with Swiss cheese. Slice 2 pieces off halloumi cheese about 1/4 inch thick. Butter the outsides of the sandwich bread and use the butter to stick the halloumi slices to the outside. Set the sandwich, halloumi down, in the hot pan. Cook until the cheese gets a golden crust on it. Flip it over. Cook until the other side is golden. Serve immediately with a pickle.
